AOP Côtes de Provence.
In the hilly area of the Maurettes the land consists of shaley soils derived from siluraian sages phyllites near Hyères, and Permian red sandstone.

VINTAGE

The 2025 vintage is marked by a striking contrast between water-rich soils and heatwaves. Autumn 2024 and the winter were very rainy. The vines began their growth cycle with good water conditions, allowing for a fast development early in the season: budbreak started very early on March 13. The first flowers appeared as early as May 12. The rain on May 20 was the last, and it was particularly hot from late May until the end of July.Consequently, the heat peak in early August accelerated grape ripening, and the harvest began on August 15 and ended on September 4.

GROWING

The vineyards are worked by hand, using natural animal fertilizers. We do not use any chemical weed killers. Buds are trimmed and a green harvest is practice to purposefully limit yields. A part of the vineyard is plowed with horses. The area between the rows of vines is grassed over with cereals.

WINEMAKING

All grapes are harvested manually, sorted, not de-stem- med and directly loaded into an hydraulic Champenois Coquard press without crushing. The grapes are lightly pressed so as to obtain optimum delicacy and fragrance from the very heart of the grapes. Fermentation with selected yeasts and ageing in concrete egg tanks. The wine is bottled at the Château la Tour de l’Evêque.

TASTING NOTES

Pale, silver lined appearance. The nose offers lots of youth with notes of pear, peach and melliferous blossoms like honeysuckle, hints of citrus recalling citron fruit. Dry, still bearing a light fizz, it is fresh, with animating citrusy vibrancy. With silky flesh and juicy core, the zesty finish brings up pear and aniseed, with a hint of white pepper and cedrate candied zests. An herbal touch of thyme and rosemary lingers on the long finish. Monkfish, fava beans and arragon mousse.
